Tomato Bean Potpourri

Yield: Serves 4. Each serving: 1 cup.

Instructions

1 cup cooked kidney beans
1 cup cooked green beans
1 cup shredded raw kale
1 cup tomatoes, diced
1/4 cup fat-free raspberry dressing

Place ingredients in a medium-sized bowl and mix together. Chill for several hours. To serve, divide between 4 small plates.

Optional garnish: bed of shredded dark green lettuce.
Serves 4. Each serving approximately 1 cup: 100 calories, 0.5 g fat, 0 g saturated fat, 0 mg. cholesterol, 125 mg. sodium, 18 g carbohydrate, 5 g fiber, 3 g sugars, 5 g protein.
