Thousand Island Dressing

Using yogurt instead of mayo makes this recipe suitable for Diabetics!

Yield: 2 1/2 cups

Ingredients

  • 2 c. plain low fat yogurt
  • 2 hard-cooked eggs, minced
  • Enough catsup to make a coral color
  • 1/2 cup of dill pickle relish
  • Salt to taste
  • 1 tsp of sweet hungarian paprika, for a professional touch

Instructions

  1. Stir all ingredients together and chill thoroughly before use
  2. May add Worcestshire sauce for a richer flavor, and if a sweeter dressing is desired, may use one to two packets of sugar substitute
