Thai Chicken Stir Fry
Stir fry with a Thai zing.

Ingredients
1/2 lemon rind, sliced
2 tsp. ground ginger
1 garlic clove, chopped
4 boneless chicken breasts, cut into bite-sized pieces
1/2 red bell pepper, seeded and sliced
1 medium carrot, cut into match sticks
2 Tbs. oyster sauce
Salt and pepper
4 Tbs. fresh cilantro
Cooking spray
Instructions
Spray skillet with cooking spray
Stir fry lemon rind with garlic and ginger until brown
Add chicken and stir fry for a few minutes
Add vegetables and stir-fry until chicken is cooked and vegetables are almost cooked
Stir in oyster sauce and season to taste
Stir-fry one more minute
Garnish with cilantro
