Sweet Squash Pudding

Yield: Serves 6. Each serving: 1/2 cup.

12 oz frozen winter squash, thawed
2/3 cup fat-free cottage cheese or silken tofu
1/2 tsp pumpkin pie spice or cinnamon
2 egg whites
1/4 cup skim milk
1/4 cup brown sugar
1/2 tsp vanilla or maple flavoring

Directions:
Combine all ingredients in a blender until smooth. Pour into a 1.5-qt casserole dish and bake at 375 °F for 45 minutes, until center is set. Serve warm or chilled.
