Sweet Potato

Yield: Serves 1.



1 sweet potato
1 teaspoon light margarine
1 tablespoon low-calorie maple syrup

Wash sweet potato under cold, running water and pierce with fork. Place in microwave and cook on full power until tender, about 5-6 minutes; turn once during cooking. Cut in half and top with light margarine and low-calorie syrup.

Optional topping: ground cinnamon
