Super Crucifer Stir-Fry

Yield: Serves 4.



Serve this recipe as a side dish. You can top it with grilled chicken or fish and serve it over brown rice for a great meal!

1 Tbsp canola oil
1 Tbsp garlic, minced
1 cup broccoli florets, fresh or frozen
1 cup carrots, sliced
2 cups cabbage, shredded
1 cup mushrooms, sliced
ground ginger to taste
light soy sauce to taste

Heat a large, nonstick skillet over medium-high heat. Add the canola oil and sauté the garlic until golden brown, about 1-2 minutes. Add the rest of the vegetables and sauté until crisp-tender, about 3-5 minutes. Season with ginger and light soy sauce.
