Sugar Free Cookies

Made sweet with apples and coconut! Suitable for Diabetics!

Yield: Makes 40 cookies

Ingredients

Instructions

  1. Simmer raisins with water for 15 minutes
  2. Drain juice and add enough water to measure 3/4 cup
  3. Cream shortening and eggs
  4. Add vanilla, and sugarless apple juice thawed and diluted to make 1 1/2 cups liquid
  5. Beat well
  6. Sift together flour, baking powder, soda, 1 teaspoon cloves, cinnamon and salt
  7. Add to egg mixture and beat well
  8. Stir in raisins and the 3/4 cup raisin liquid, chopped nuts and coconut
  9. Drop rounded tablespoons on a cookie sheet sprayed with Pam
  10. Bake at 350 degrees, for 10-12 minutes
