Sugar-Free Chocolate Pudding

Yield: Serves 4. Each serving: 1/2 cup



12 ounce package silken tofu
1/3 cup skim milk or soy milk
1/3 cup Splenda
1/2 teaspoon vanilla extract
1/4 cup cocoa powder

Place all ingredients in food processor. Blend on high speed, scraping bowl, until smooth. Divide mixture into 4 small dessert dishes and refrigerate until ready to serve.

Optional toppings: fat-free whipped cream, fresh fruit, chocolate chips
