Sugar Free Banana Bread

Moist and sweet, without the sugar!

Exchanges: 1 bread and 1/2 fat. Calories =109. Carbohydrate = 15 grams. Fat = 4 grams. Protein = 2/5 grams Cholesterol = 39 milligrams
Yield: Serves 12-14 (14 slices or 12 muffins)

Ingredients

  • 1 3/4 c. sifted cake flour
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 c. vegetable oil
  • 2 eggs, beaten
  • Liquid sweetener to equal 1/2 c. sugar
  • 1 tsp. vanilla
  • 2 med. sized bananas, mashed
  • Cinnamon and nutmeg to taste

Instructions

  1. Sift together flour, baking powder, baking soda and salt
  2. Add remaining ingredients except bananas
  3. Stir only until flour mixture is moistened
  4. Fold in mashed bananas
  5. Pour into greased 8 x 4 inch loaf pan (or greased muffin tin for muffins)
  6. Bake at 350 degrees until top springs back when touched, about an hour (reduce time if making muffins)
