Strawberry Silk Smoothie

Yield: Serves 2. Each serving: 1 cup.



1 cup strawberries (fresh or frozen thawed)
1/2 box (6 oz) silken light firm tofu
3 Tbsp sugar
2 cups fortified soy milk

Place strawberries, tofu and sugar in a blender. Add a little milk. Blend on high speed, adding the rest of the milk slowly until the mixture is smooth and thick. Adjust the consistency with a little more milk if needed.
