Strawberries are an excellent source of vitamin C and a good source of folate and potassium; additionally they are packed with antioxidants and the phytochemical ellagic acid. Plus there are 3 grams of fiber per cup.
1 pint fresh strawberries, hulled and sliced
1 box strawberry jello mix
2 Fig Newtons or other fat free fruit cookies
1/4 cup graham crumbs
Prepare jello mix according to package directions. Place strawberries in glasses and then pour jello over the berries. Refrigerate until firm. Combine cookies and graham crumbs in blender or food processor. Blend until mixture resembles coarse crumbs. Serve crumbs on top.
