Steamed artichokes are a dieter’s best friend because they have very few calories and take a while to eat.
With a large sharp knife, cut off top 1/3 of each artichoke. Cut stems to base of artichoke.
Place a steamer basket or rack in bottom of a large pot. Add water to come up to bottom of basket; cover and bring to a boil.
Put artichokes on steamer. Cover and cook over medium-low heat, adding more water if necessary, until leaves can be easily pulled out and the flesh of the artichoke is tender, about 35 to 40 minutes.
Meanwhile to make the dipping sauce, put roasted pepper, mayonnaise, garlic, and paprika in a mini food processor or blender. Process until smooth.
Scrape into a small serving bowl or 4 tiny individual bowls. Serve with the artichokes.
