Wash the potatoes and slice in to wedges, about 1/3" thick. Fill a bowl with water and soak the wedges for one to two hours.
Preheat the oven to 450 degrees F.
Combine the Sriracha, oil, and spices. Set aside.
Drain the potatoes and thoroughly pat dry. Then add to the sauce and toss until thoroughly coated.
Lie the potatoes flat on a wire baking rack, place in the oven, and bake for about 20-30 minutes.
