Spicy Bean Soup

Yield: Makes 4 servings. Serving size: 1 cup.

15 ounce can pinto beans, drained and rinsed
15 ounce can diced tomatoes, no added salt
8 ounce can no-salt-added tomato sauce
1 cup water
1 Tablespoon minced dried onion
1 teaspoon garlic powder
1 teaspoon chili powder
1/2 teaspoon dried oregano
Garnish: nonfat sour cream, fresh cilantro

Directions:
Place all ingredients (except garnishes) in a 2-quart pan and bring to a boil over high heat. Reduce heat to simmer and cook for 5-6 minutes.

Serve hot. Garnish with nonfat sour cream and fresh chopped cilantro.
