Southwestern Salad with Cilantro Lime Vinaigrette
A fresh salad that just screams the flavors of Summer.
Yield: Serves 2
Ingredients
Salad
- 4 cups mixed greens (choice of spring greens, spinach, romaine, etc.)
- 1 cup black beans (if canned, rinse juice)
- 1/2 cup frozen sweet corn, thawed
- 1 roma tomato, chopped
- 1/2 red bell pepper, chopped
- 1 avocado, sliced
- 1 grilled chicken breast (optional)
Cilantro Lime Vinaigrette
- 2 Tbsp. olive oil
- 1 lime, juiced
- 1 small handful fresh cilantro
- 1 tsp. cumin
- pinch kosher salt
Instructions
Salad
- Rinse vegetables and chop
- Combine ingredients together in large bowl, toss, and then divide between two plates
- Top salad with sliced avocados and chicken (if desired)
Vinaigrette
- In a blender combine all ingredients
- Mix on "liquify" for about 20 seconds
- Pour across both salads
