Southwest Corn Salsa

Yield: Serves 4 - 3/4 cup per serving.



This makes a great side dish for veggie burgers or burritos.

2 cups corn kernels, cooked
1/2 cup chopped green pepper
1/2 cup chopped red pepper
1/4 cup chopped green onion
2 tablespoons chopped fresh cilantro
1/2 teaspoon cumin
1/2 teaspoon vinegar

Mix and serve. You can make ahead of time and keep chilled until ready to use; it keeps for a day if covered.
