Snapper with Lemon Basil Sauce

The sauce really adds to this snapper dish.

  1. Divide the fillets into 4 pieces
  2. Sprinkle lightly with salt, pepper and paprika
  3. Set aside and dice the bell pepper and green onions
  4. Place a large non-stick skillet over high heat
  5. When hot, add the oil
  6. Place fish in the pan and fry for 2 minutes; turn gently
  7. Place the thinner pieces toward the rim of the pan, and make room
  8. Add the peppers, onions, basil and chives
  9. Reduce heat, add the lemon juice and white wine vinegar
  10. Serve
