Scrambled Egg Pizza

An unexpected twist on breakfast.

  1. Preheat oven to 375º F
  2. Saute the zucchini, mushrooms and red pepper in olive oil for 5 minutes, or until tender
  3. Remove vegetables
  4. In a large bowl, beat the eggs, cream and water together
  5. Add egg mixture to original skillet and cook without stirring until mixture begins to set on the bottom and around the edge
  6. Cook a few minutes more until eggs are cooked, but still moist
  7. Place scrambled eggs on pizza pan (sprayed with oil)
  8. Top with vegetables, bacon and cheese
  9. Bake for 6-8 minutes, or until cheese melts
