Salmon Salad Sandwich

Yield: Serves 4. 1 sandwich per serving.

7.5 ounce can red salmon, drained
1/2 cup diced cucumber
1/4 cup sliced green onion
1/4 cup sliced red bell pepper
2 ripe plum tomatoes, diced
1/3 cup nonfat plain yogurt
8 slices whole grain bread
2 cups shredded dark green lettuce

Mix salmon, vegetables and yogurt together in medium-sized mixing bowl.

Make 4 sandwiches with salmon and dark green lettuce in between 2 slices of whole grain bread.

Serve with slaw and fresh vegetable sticks.
