Red Grilled Potatoes

Yield: Serves 4. Each serving: 1/2 cup.



3 large baking potatoes
1 tsp olive oil
1/4 tsp ground cumin
pinch chili powder
1/2 tsp garlic powder
1/4 tsp paprika
2 Tbsp tomato paste
2 Tbsp water

Wash, pierce and microwave the potatoes until done, about 8-10 minutes. Cool and peel them, and cut them into cubes. Put them aside. Add oil to a large nonstick skillet and heat over medium-high heat. Sauté the potato cubes until golden, about 3 minutes. Add the seasonings while the potatoes are cooking. Add the tomato paste and water, toss well and serve hot.
