Quick and Fancy Salad

Yield: Serves 6. Each serving: 1-1/2 cups.



This salad uses simple and colorful ingredients. It presents a different twist from everyday greens and cucumbers!

8 cups mixed leafy greens
1 cup grape tomatoes
1 diced pear
1/4 cup diced red onion
1/4 cup feta cheese
2 Tbsp pecans
1 lemon, cut into wedges
black pepper to taste
1 Tbsp olive oil

1. Place the greens in a large salad bowl.
2. Top them with the tomatoes, pear, onion, cheese and pecans.
3. Garnish the salad with lemon wedges and black pepper.
4. Serve with a cruet of olive oil to the side. Allow guests to serve themselves and top their own salad with fresh lemon juice and a dash of olive oil.
