Pizza Salad

Yield: Serves 4 - 2 cups per serving.



Lettuce and pizza fixings are tossed together and served on a toasted tortilla.

4 large lowfat or fat free flour tortillas
6 cups dark green lettuce, chopped
1 cup lowfat sausage or 8 slices lowfat ham, sliced thin
4 small tomatoes, diced
1/4 cup grated nonfat mozzarella cheese
1 cup sliced green onion
1/4 cup balsamic vinegar
2 tablespoons Italian Seasoning

Preheat oven to 375º. Bake tortillas until crisp and golden brown. You can also use a toaster oven for this but watch them carefully so they donít burn.

Toss lettuce with remaining ingredients in a medium-sized bowl. Place baked tortilla on plate to one side. Shingle salad so it is half on the tortilla and spilling onto the rest of the plate.

Optional: sprinkle with fresh-cracked black pepper.
