4 medium sized potatoes, baked
4 cups steamed mixed vegetables
4 cups tomato sauce, no salt added
1/4 cup reduced fat cheddar cheese
1/2 tsp dried oregano
1/2 tsp dried basil
black pepper to taste
Heat tomato sauce. Split the potatoes in half lengthwise and fill with steamed veggies. Top with tomato sauce and cheese. Sprinkle with oregano, basil and pepper. Serve hot.
