Peter's Grill Vegetable Soup

Peter's Grill Vegetable Soup Photo Yield: Serves 6 (1 cup serving)

Ingredients

Instructions

  1. In a kettle, saute onions, celery, carrots and potatoes for about 15 minutes.
  2. Add tomatoes, salt, sugar substitute, frozen vegetables and water or stock.
  3. Simmer until vegetables are done, about 15 to 20 minutes.
  4. Salt and pepper to taste.
  5. Add fresh or dried herbs at finish.

Note: Feel free to add any other vegetables of choice like cabbage, squash or zucchini.
