Peasant Soup

Yield: Serves 4. Each serving: 1-1/4 cups.



1 tsp olive oil
1 onion, sliced thin
3 cups chicken or vegetable broth
1 cup potatoes, sliced thin, leave peel on
1 cup carrots, peeled and sliced
1/2 tsp oregano
1/2 tsp dried basil
1/2 tsp garlic powder
black pepper to taste
2 cups ready-to-serve spinach leaves

Heat a large soup pan over medium-high heat. Add the oil and sauté the onion over medium-high heat. Add the broth, potatoes, carrots and seasonings. Bring to a boil then lower heat to simmer. Cook until the potatoes are tender, about 15 minutes. Add the spinach and cook briefly. Serve hot.
