1 box (12 oz) firm silken light tofu
1 can (15 oz) light peaches in juice, drain and reserve the juice
1/4 tsp almond extract
2 Tbsp sugar
Place the tofu, peaches (without juice), almond extract and sugar into a blender or food processor. Blend until smooth, adding a little of the juice as needed to obtain a pudding consistency. Pour into serving dishes. If you are using as a dip for fresh fruits, pour into a large serving bowl. Refrigerate until ready to serve.
Serving suggestion: This mousse looks very elegant if you garnish the top of it with fresh fruit and a dollop of nonfat vanilla-flavored yogurt.
