Peach Compote

Peach Compote Photo Yield: Serves 4. 3/4 cup per serving.



5 ripe peaches, cut in wedges
1/4 tsp cinnamon
1/2 cup apple juice
1 tablespoon sugar

Place ingredients into medium-sized sauce pan and bring to a boil. Reduce to a simmer and cook for 5 or 10 minutes or until peaches become very soft. Cool slightly and serve while still warm.

Optional serving suggestion: nonfat frozen vanilla yogurt
