Tapioca adds excellent flavor and thickness to fruit puddings.
2 pears, peeled, cored, diced
3 tablespoons instant tapioca
2 cups orange juice
1/2 cup water
1/2 cup skim milk
1/2 teaspoon cinnamon
Mix the first three ingredients together in a large ceramic microwave dish. Microwave for 12-18 minutes on high or until mixture thickens and bubbles. Stir in remaining three ingredients. Can be served warm or chilled completely.
