Orange-Almond Spinach Salad Photo Yield: Serves 4. Each serving: 1 cup.

*This salad goes well with lean baked ham or fish. *

12 oz fresh spinach, washed and torn into pieces
1 cup orange, diced
1/2 Tbsp oil
3 Tbsp red wine vinegar
1/4 cup green onion, chopped
1/4 cup slivered almonds

OPTIONAL: Make it a meal by topping with grilled seafood, like scallops.

Directions:
Mix all ingredients together in a large bowl and serve immediately.
