Oatmeal Chocolate Chip Cookies

Yield: Makes 36. Each serving: 1 cookie.

1 stick trans-fat-free margarine (ie Promise)
1/3 cup brown sugar
1/3 cup granulated sugar
1-1/2 tsp vanilla extract
1 egg
1-1/4 cups all purpose flour
1/2 cup oatmeal
1/2 tsp baking soda
1/2 tsp apple pie spice
1 cup chocolate chips

Preheat oven to 350 degrees.

Cream the margarine and sugar together until fluffy. Add the vanilla extract and egg. Mix smooth. Add the rest of the ingredients, scrape the bowl and mix smooth again.

Form small balls for cookies using scoop or tablespoon. Arrange on tray so they are not too close together. Bake at 350 degrees until cookies are done, about 10 minutes.

Remove cookies from trays and allow to cool briefly before removing from pan. Cool completely.
