Mock French Toast
French toast without the bulky bread.

Ingredients
6 oz. unflavored pork rinds
4 eggs
1/2 cup heavy cream
6 packets artificial sweetener
1 tsp. cinnamon
1 tsp. vanilla extract
Instructions
Crumble pork rinds up until they resemble bread crumbs and set aside
Beat eggs
Add remaining ingredients and mix well
Add crushed pork rinds to the egg mixture and allow to sit for approximately 5 minutes
Meanwhile, heat butter or oil in a skillet
Pour onto skillet 1/8 cup at a time
Heat, turning once
Serve with blackberry syrup, maple butter or low carb maple syrup
