Microwave Baked Beans

Yield: Serves 4. 3/4 cup per serving.

1/4 cup dried onion
1 apple, cored and diced
1 can pinto beans, rinsed and drained
1 tablespoon molasses
1 tablespoon red wine vinegar
1/4 cup water

Combine all ingredients in small microwave casserole dish. Cover and microwave on high until apples are tender, about 8-10 minutes. Serve hot.

This dish looks nice if served in ramekins and garnished with sliced fresh apples. We suggest serving the microwave baked beans with steamed veggies.
