Marbled Strawberry and Cream Pie
The perfect combination of sweet strawberries and light cream.
Yield: Serves 10
Ingredients
- 1- 9-inch ready-made graham cracker crust
- 1 package unflavored gelatin
- 1/4 cup cold water
- 1/2 cup granulated sugar
- 3/4 cup boiling water
- 1- 10oz. package frozen sliced strawberries in syrup
- 2 Tbs. strawberry-kiwi beverage concentrate
- 1/2 cup whipping cream
- 1- 3oz. package cream cheese, softened
- 1/3 cup powdered sugar
- 1 1/2 tsp. vanilla extract
Instructions
- In a large bowl, sprinkle gelatin over cold water; let stand 5 minutes to soften
- Add sugar and boiling water
- Stir until sugar and gelatin are dissolved
- Stir in strawberries and beverage concentrate
- Stir until strawberries are separated and partially thawed
- Chill until partially set
- When gelatin is ready, whip cream until soft peaks form
- With same beaters, beat together cream cheese, powdered sugar and vanilla extract in a small bowl until smooth
- Fold in whipped cream
- Alternately spoon mounds of cream cheese mixture and gelatin mixture into pie crust
- Run a knife or spatula through mixture to get marbled effect\
- Chill 3 to 4 hours or until set
