Macaroni and Cheese

Who knew it could be so easy? Low fat to boot!

Exchange: 1 bread, 1 medium-fat meat
Yield: Serves 6 (1/2 cup serving)



  1. Combine evaporated milk, flour, margarine, and salt to make a white sauce
  2. Return sauce to low heat
  3. Add grated cheese, stirring constantly
  4. Cook until cheese has melted and sauce boil
  5. Remove from heat
  6. Alternate layers of macaroni and cheese sauce in non-stick baking dish; cover with bread crumbs
  7. Bake at 375 degrees until mixture bubbles and crumbs brown
  8. Add sauteed greens, roasted garlic or veggie sausage for variety and flavor
