Low Carb Waffles
Tasty waffles that are low on carbs.

Ingredients
4 large eggs, separated
2 Tbs. butter
1/4 cup oat flour
3/4 cup light sour cream
1/2 tsp. vanilla extract
1/2 tsp. salt
Instructions
Beat the egg whites with an electric mixer until they form soft peaks
Set aside
In another bowl, cream the butter until fluffy and beat in the egg yolks one at a time
Add the oat flour and sour cream and mix well
Add a little water, if needed, to reach desired consistency
Stir in the vanilla and salt
Fold in the egg whites
Bake in a preheated waffle iron
Serve with blackberry syrup, maple butter or
low carb maple syrup
