2 cups cooked brown rice
2 cup boiled lentils
6 cups ready-to-serve romaine lettuce
1 tomato, cored and diced
1 carrot, peeled and grated
1/2 tablespoon garlic powder
1/4 teaspoon black pepper
2 tablespoons cider vinegar
Place salad lettuce on plate and top with lentils and rice. Sprinkle with vinegar and seasonings. You can also garnish with chopped fresh parsley.
