2 cups cooked lentils
1 cup chopped ripe tomatoes
1 cup chopped green pepper
1/2 cup chopped green onion
1 cup low-fat, low-sodium pasta sauce
1/2 tsp ground coriander
2 Tbsp vinegar
4 cups dark green lettuce
4 Tbsp nonfat salad dressing
4 Tbsp parmesan cheese
1/4 teaspoon fresh cracked black pepper
Drain and rinse lentils. Place all ingredients for salad into medium-sized mixing bowl and mix well.
Line 4 dinner plates with 1 cup each of dark green lettuce and sprinkle each one with 1 tablespoon nonfat dressing.
Place 1 heaping cup of lentil salad into the center of each plate; top each with 1 tablespoon of parmesan cheese and fresh-cracked black pepper.
