Lemon Pork Scaloppini

A divine pork dinner.

Yield: Serves 4



  1. Trim fat from tenderloin
  2. Cut tenderloin into 1/2 inch thick slices
  3. Place slices between 2 sheets of heavy-duty plastic wrap and pound to 1/4 inch thickness, using a meat mallet or rolling pin
  4. Combine flour, salt and pepper in a large heavy-duty, zip-top plastic bag, add pork slices
  5. Seal bag, and shake until pork is coated
  6. Coat a large nonstick skillet with cooking spray and add 1 tsp. oil
  7. Place over medium-high heat until hot
  8. Add half of pork slices
  9. Cook 2 minutes on each side or until browned
  10. Transfer to a serving plate, keep warm
  11. Repeat procedure with remaining 1 tsp. oil and pork slices
  12. Remove skillet from heat
  13. Add lemon juice, water and capers to skillet, bring just to a boil
  14. Pour mixture over pork slices, sprinkle with parsley
