Lemon Couscous Salad

Yield: Serves 4. 1 cup per serving.



Fresh mint, lemon, peppers and green onion make this salad a quick winner.

1-1/2 cups couscous
2 cups water
1 spray olive oil cooking spray
1 tablespoon chopped fresh mint
1/4 cup chopped green onion
1/4 cup chopped red bell pepper
1/4 cup chopped green bell pepper
1 lemon, zest and juice

Combine couscous and water in small sauce pan; cover and cook for 5 minutes or until water evaporates and couscous is tender.

Lightly spray top of couscous with olive oil cooking spray and toss with remainder of ingredients. Chill before serving.
