1 cup dry lentils
2 cups Healthy Request V8
2 cups water
2 cups frozen mixed vegetables
Place lentils, juice and water in a large Dutch oven (4 quart) over medium-high heat and cook until the lentils are soft- about 35-45 minutes. Add the frozen mixed veggies the last 5 minutes of cooking so they can heat thoroughly and be tender- but not over-cooked. Kids like this recipe better when it is pureed.
