Italian Chopped Salad

Yield: Serves 4. 1-1/2 cups per serving.

4 cups Romaine lettuce, washed, dried and chopped in small pieces
1 tablespoon dried Italian seasoning
2 cups chopped salad vegetables
3 tablespoon balsamic vinegar
1/4 teaspoon fresh cracked black pepper

Toss all ingredients together.

Optional: you can spray lettuce leaves with a little olive oil spray for added flavor.

Salad tips: always dry your lettuce after washing. Keep it stored in a bag or covered container until ready to use. Experi-ment with different colors and varieties of lettuce leaves; this presents an interesting salad with more flavor. For more flavor, use fresh chopped herbs, such as parsley and basil along with the lettuce.
