Hot Apple Slaw

Yield: 4- 1 per serving



3 tablespoons cider vinegar
2 tablespoons water
1 tablespoon sugar
1 teaspoon caraway seeds
4 cups shredded cabbage
2 large apples, peeled, cored and sliced

In a large glass or ceramic bowl, cook the first 4 ingredients in the microwave until they come to a boil. Then add the cabbage and apple. Stir and cook on high for 2 minutes or until cabbage and apple are crisp-tender.

Serve with grilled chicken or fish.
