Hoppin John

Yield: Serves 8.



2 tsp vegetable oil
1 Tbsp minced garlic
1 cup chopped onion
1 lb dried black-eyed peas
1/2 lb diced turkey ham
1 bay leaf
pinch red pepper flakes
6 cups water
1 cup brown rice
1/2 cup chopped parsley
black pepper to taste

Heat oil in Dutch oven or other large pot over medium-high heat. Add garlic and onion and sauté until golden. Add black-eyed peas, diced turkey ham, seasonings and water and bring to boil. Add rice and parsley and return to a boil. Lower heat, cover tightly and simmer until peas and rice are tender, about 30 minutes. Season with pepper to taste and serve hot.
