Honey Glazed Carrots

Yield: Serves 6. Each serving: 3/4 cup.



1 tsp olive oil
1 lb fresh carrots, peeled and cut into half-inch thick slices
1/4 tsp ginger
3/4 cup water
2 Tbsp honey
1/4 cup seedless dark raisins

Heat a large nonstick skillet over medium-high heat. Add the olive oil and then sauté the carrots for 3 minutes. Add the rest of the ingredients, bring to a boil then reduce heat to low. Cook covered until carrots are crisp-tender, about 5 minutes. Serve hot.
