Homemade Granola
So good you won't believe it's sugar free!
Diabetic exchange/serving: 1 starch, 1 fat. 140 cal; 15 g carbohydrates, 5 g protein, 7 g fat, 57 mg sodium.
Yield:
Makes 6 ½ cups (½ cup per serving)
Ingredients
4 c. quick cooking rolled oats
½ c. Grape Nuts cereal
Granulated sugar sub. equal to 1/4 c. sugar
1 c. chopped peanuts
⅓ c. honey
½ c. wheat germ
½ c. raisins
Instructions
Preheat oven to 350 F. Have 2 rimmed baking sheets ready
Spread oats on one of the ungreased baking sheets; bake 10 minutes
Combine remaining ingredients except wheat germ and raisins
Spread mixture on the other baking sheet. Bake 20 minutes, stirring once to brown evenly
Cool in Oven
In a large bowl, stir oats, wheat germ and raisins into mixture
Refrigerate in jars or plastic containers
