Grilled Sesame Salmon
A salmon dish fit for a special occasion

Ingredients
2- 6 oz. salmon fillets, all skin removed
salt and pepper
4 Tbs. sesame seeds
3 tsp. olive oil
2 Tbs. rice wine vinegar
2 Tbs. soy sauce
2 cucumbers, sliced thinly lengthwise
Instructions
Heat grill or broiler
Slice the salmon fillets open horizontally, leaving one end intact
Spread fillets open and turn over
Season with salt and pepper
Tightly roll fillets
Secure with toothpick
Pour sesame seeds into a small dish
Place rolled fillets in the seeds and coat bottom
Drizzle with olive oil
In a small bowl, mix vinegar and soy sauce
Set aside
Fold edges of a piece of heavy-duty aluminum foil to form a shallow baking pan; place on grill
Arrange rolled fillets on foil
Grill 4-6 minutes on each side (or broil in the oven)
Remove, drizzle with reserved soy mixture and place on bed of cucumber strips
