Relish and ripe tomatoes are tossed with ham for a new twist on an old friend, the ham sandwich.
12 slices lowfat, low sodium ham, diced
1 cup (approx. 3) diced ripe tomatoes
1 tablespoon sweet relish
1/3 cup sliced green onion
2 tablespoons nonfat mayonnaise
1/4 cup shredded romaine lettuce
8 slices whole grain bread
Mix diced ham, tomatoes, relish, onion and mayonnaise in medium-sized mixing bowl. Divide the ham salad among 4 slices whole grain bread, place lettuce on top of the salad; top with bread.Serving suggestions for this sandwich: baked tortilla chips, carrot sticks and small tossed green salad.
