Flax Chocolate Chip Cookies

Yield: Serves 18. Each serving: 1 cookie.



1 stick trans-free margarine
1/3 cup brown sugar
1/3 cup granulated sugar
1 egg white
1 teaspoon vanilla extract
1 cup all purpose flour
1/2 cup oatmeal
1/2 cup ground flaxseeds
1 teaspoon apple pie spice
1 cup mini chocolate chips

Cream margarine and sugar together in a large mixing bowl with hand beaters. Add egg white; mix smooth.

Add the rest of the ingredients. Scrape the bowl and mix until the cookie dough forms a ball.

Preheat oven to 350 degrees. Scoop cookies using small scoop or tablespoon onto nonstick cookie tray. Bake in the oven until done, around 10 minutes. Remove from pan and allow to cool at room temperature. Store in bags or sealed container.
