Fish with Black Beans

A great black bean and fish salad.

Yield: Serves 3



  1. Squeeze lime on fish fillets
  2. Salt and pepper to taste
  3. Set aside
  4. In a small nonstick saucepan, warm the beans over medium heat with garlic and butter
  5. Dice and add the tomatoes and zucchini
  6. Add the sun-dried tomato paste, broth and season with western spice blend
  7. Keep warm, add water as needed
  8. Combine soy sauce, malt vinegar, pinch of salt and yogurt
  9. Preheat grill
  10. Grill the fish for 2 -3 minutes, or until flaky
  11. To serve cut fish fillets into long fingers and place in the center salad
  12. Serve with beans and yogurt
