Fiber Up Salad

Yield: Serves 4. 1 cups per serving.



4 cups romaine
1 cup cabbage
1 orange, peeled and cut in chunks
1 tomato, chopped
1/2 cup chopped green onion
1 cup cooked kidney beans, drained and rinsed
2 tablespoon olive oil
3 tablespoon flavored vinegar
1 teaspoon Italian seasoning

Place all ingredients in large salad bowl. Toss well and serve immediately or chill up to one hour for later use.
